Gala Spotlight: Zac’s Montana Kitchen

Each element of the Gala, from the menu to the decor, is thoughtfully designed to create an experience for our guests that embodies the H&H ethos.

This year we are excited to be working alongside Zac Kellerman of Zac’s Montana Kitchen, to curate a menu that reflects our nutrition program - the Anti-Inflammatory Farmacy.

Zac Kellerman, one of Montana’s premier chefs, specializes in cooking on the range, that is, the wide-open range of the great American West. An abundance of fresh food springs from this vast territory – wild fish and game, organic fruits and vegetables, meats from sustainable ranches, and free-range poultry. Combine these with the freewheeling creativity of the West, and the result is wholesome dishes deliciously prepared for events of all sizes. 

This year, Zac has custom-designed a menu designed to promote and sustain good health for its members and their families while delivering bountiful flavors. Ingredients are carefully chosen with a commitment to quality and nourishment:

  • Organic fruits and vegetables

  • Sustainably produced meats and seafood

  • Whole ingredients with no processed food items

  • No dairy, alcohol, or added sugars

Ever since his first cooking job at age 15 when he was hooked by the excitement and pride of cooking well, Zac has felt most at home serving people his delicious food. He studied chemistry at the University of Louisville in his hometown, and later at the University of Montana. While working at a lodge in Glacier National Park, Zac realized that what he really wanted to do was become a chef. The artistic impulse had grabbed him, and food was his medium. 

Back in Louisville, Zac met the renowned chef, Dean Fearing, from The Mansion on Turtle Creek in Dallas. As a result of that fortunate encounter, Zac moved to the Lone Star state a month later, and worked four years at The Mansion under Dean’s tutelage. When not at The Mansion, Zac worked as a “freelance special event chef” for a high-flying and elite Dallas clientele. He credits those years with teaching him the most about quality, skill and finesse in the kitchen, not to mention the art of hospitality. 

In 1998 Zac moved to Livingston, Montana. Since 2005 Zac has been the chef/owner of Zac’s Montana Kitchen, an upscale catering company that specializes in providing sophisticated culinary experiences for local, regional, and global clients. Zac has since become one of the best-known chefs in Montana, recognized for his gracious ability to accommodate challenging requests from clients large and small, while maintaining the highest standards of quality. 

Not even the Big Sky state is big enough for Zac Kellerman. He’s at home on any range, and now prepares feasts across North America and beyond for those who appreciate food that’s as honest and grand as the West. Zac’s Montana Kitchen may not be bound by walls or geography, but is certainly bound to please.
